Designed by Arch11, this brand-new 75 seat fast-casual restaurant is located in Galvanize Denver (1644 Platte St), a bustling hub for tech startups and entrepreneurs. With WeWork planning to open a coworking office across the street at 2420 17th St in the near future, Brider will inevitably be a haven for the hungry tech/startup crowd.
Serving breakfast, lunch, & dinner, acclaimed chef Steven Redzikowski (owner of Oak at Fourteenth & Acorn in Boulder) will focus on rotisserie cooked meats (chicken, pork, & lamb leg) while pastry chef Michael Conti will create killer danishes, muffins, cookies, banana bread & beyond. Ecospace’s Insider’s tips:
- Proper pronunciation of Brider is actually “Bri-day”, but they’ll forgive you.
- Table service has been ditched in favor of a walk-up counter (great for to-go).
- Open for breakfast & lunch 8:00 a.m. – 2:30 p.m. during their soft opening – hours will expand to include dinner after the new year.
